Last week Juliet and Emily visited the University of Otago’s food science Upcycled Food Lab. At the lab they sampled food made by students from off-cuts and by-products of food production.
Speaking to the Otago Daily Times during the visit, Juliet says “There are people working on innovative products like ‘this’ so that if you really can’t rescue the food, you can upcycle it, add value, and do something clever”. The article is available on the ODT website.
